That philosophy stayed with me, but after being diagnosed with Celiac disease, I found myself craving the cookies I once adored. The gluten-free options available were disappointing—dry, crumbly, or filled with artificial flavors. So, I took matters into my own hands, and I began experimenting in the kitchen…

Hundreds of trials (yes, literally hundreds) later, I perfected a gluten-free sablé so irresistibly crumbly and buttery that even the most devoted gluten-eaters were converted. That success fueled my obsession—to recreate more of my favorite French cookies without compromise.
